Ingredients

  • 1 pouch of SOMOS™ Mexican Brown Rice
  • 1 pouch of SOMOS™ Mexican Peacadillo™
  • 6 corn tortillas
  • ½ avocado, sliced
  • ¼ red onion, sliced
  • 2 tbsp cilantro, chopped
  • 3 tbsp cotija cheese
  • 1 lime, cut into wedges
  • 2 tbsp vegetable or olive oil

Prep

  1. In a large cast iron skillet or comal, heat oil and cook tortillas until warm and pliable
  2. Microwave SOMOS™ Mexican Brown Rice and SOMOS™ Mexican Peacadillo™ for 90 seconds each and scoop into each tortilla
  3. Top the tacos with cotija cheese, cilantro, and onion. Serve with avocado and lime.
