Ingredients

  • 1 jar SOMOS™ Red Enchilada Sauce
  • 1 pouch SOMOS™ Mexican Black Beans
  • 2 tbsp olive oil
  • 3-4 cups chicken broth
  • 1 cup canned or frozen corn
  • 2 cups shredded rotisserie chicken
  • ¼ cup sour cream
  • ¼ cup fresh cilantro
  • 1 jalapeño, sliced
  • 1 avocado
  • 2 cups tortilla strips (optional)

Prep

  1. Heat oil in a large pot and add SOMOS™ Red Enchilada Sauce.
  2. Add 3 cups chicken broth and season with salt and pepper to taste. Add more chicken broth if needed.
  3. Add SOMOS™ Mexican Black Beans , corn, shredded chicken and bring to a boil.
  4. Serve with avocado, cilantro, sour cream, jalapeño slices and tortilla strips.
