Ingredients

Bowl 1:

  • 1 pouch of SOMOS™ Cilantro Lime White Rice
  • 1 pouch of SOMOS™ Spicy Refried Beans
  • ½ red beet, roasted
  • ½ golden beet, roasted or canned
  • 1 cup cherry tomatoes, cut in half
  • 2 tbsp cilantro, chopped
  • 1 lime, juiced

Bowl 2:

  • 1 pouch of SOMOS™ Mexican Brown Rice
  • 1 pouch of SOMOS™ Mexican Black Beans
  • 1 serrano pepper, sliced
  • 2 tbsp cotija cheese
  • 1 cup tomato, finely diced
  • ½ cup red onion, diced
  • 2 tbsp cilantro, chopped

Prep

Bowl 1:

  1. Microwave SOMOS™ Cilantro Lime White Rice and SOMOS™ Spicy Refried Beans for 90 seconds each
  2. Cut the roasted or canned beets into bite-sized wedges and place them in a small bowl with the halved cherry tomatoes. Toss with lime juice and a pinch of salt and set aside
  3. Scoop SOMOS™ Cilantro Lime White Rice and SOMOS™ Spicy Refried Beans evenly into bowls and top with beet and tomato mixture. Garnish with cilantro and serve

Bowl 2:

  1. Microwave SOMOS™ Mexican Brown Rice and SOMOS™ Mexican Black Beans for 90 seconds each
  2. In a small bowl, combine tomato, serrano pepper, red onion, and cilantro to make Pico de Gallo
  3. Scoop SOMOS™ Mexican Brown Rice and SOMOS™ Mexican Black Beans evenly into bowls and top with Pco de Gallo and cotija cheese
