Ingredients

  • 1 pouch of SOMOS™ Cilantro Lime White Rice
  • 1 pouch of SOMOS™ Mexican Black Beans
  • 8 corn tortillas
  • 3 tbsp crema or sour cream
  • ¼ cup red cabbage, shredded
  • ¼ cup cotija cheese
  • 1 radish, thinly sliced
  • 2 tbsp cilantro, chopped
  • 1 lime, cut into wedges
  • 2 tbsp vegetable or olive oil

Prep

  1. In a large cast iron skillet or comal, heat oil and cook tortillas until warm and pliable
  2. Microwave SOMOS™ Cilantro Lime White Rice and SOMOS™ Mexican Black Beans for 90 seconds each
  3. Starting with the rice, distribute both the rice & beans evenly between each tortilla
  4. Garnish with crema, cabbage, cilantro, and radish
  5. Serve with lime & enjoy!
