Ingredients

  • 1 pouch of SOMOS™ Peacadillo™ in Salsa Verde
  • 1 jar of SOMOS™ Red Enchilada Sauce
  • 12 corn tortillas
  • 2 tbsp vegetable or olive oil
  • ½ cup Manchego cheese, shredded
  • ¼ cup crema or sour cream
  • ¼ cup cotija cheese
  • ¼ onion, sliced
  • 3 radishes, sliced
  • 2 tbsp cilantro, chopped

Prep

  1. Preheat oven to 350° F
  2. In a large cast iron cast skillet or comal, heat oil and add tortillas
  3. Flip tortillas when crispy, about 2-3 minutes
  4. Microwave SOMOS™ Peacadillo™ in Salsa Verde for 90 seconds & add a large scoop on top of each tortilla
  5. Remove tortillas from the pan then roll them up tightly
  6. Transfer to a baking dish then top with SOMOS™ Pasilla Pepper Salsa Ranchera
  7. Top with Manchego cheese then place in the oven for 20 minutes or until the enchiladas are slightly crispy
  8. Remove from oven & garnish with crema, cotija cheese, sliced red onion, sliced radishes & cilantro
  9. Serve & enjoy!
