Ingredients

  • 1 pouch of SOMOS™ Mexican Brown Rice
  • 1 pouch of SOMOS™ Mexican Black Beans
  • 5 bell peppers, halved
  • 1 cup Manchego cheese, shredded
  • ½ cup cotija cheese
  • 1 bunch of cilantro, chopped

Prep

  1. Preheat oven to 350° F
  2. Slice bell peppers vertically in half & remove the seeds
  3. Separately microwave SOMOS™ Mexican Brown Rice & SOMOS™ Mexican Black Beans for 90 seconds
  4. Mix SOMOS™ Mexican Brown Rice & SOMOS™ Mexican Black Beans together and add inside of each pepper
  5. Add Manchego cheese & cotija cheese on top of each pepper
  6. Place in the oven for 20-25 minutes
  7. Garnish with cilantro & serve
