Ingredients

  • 1 pouch SOMOS™ Poblano Brown Rice
  • 1 pouch SOMOS™ Mexican Black Beans
  • 1 bag of SOMOS™ Unusually Thick & Crunchy Tortilla Chips
  • ½ lb chicken breast or any leftover meat
  • 1 avocado, sliced
  • 3 cups lettuce, chopped
  • 1 bell pepper, chopped
  • 1 tomato, chopped
  • 1 jalapeño pepper, seeds removed & chopped
  • ¼ cup cilantro, chopped
  • 1 scallion, chopped
  • 2 limes, juiced

Prep

  1. Cut cooked chicken into slices and set aside in a bowl
  2. In a small bowl, combine tomato, onion, jalapeño, scallion, ½ of the cilantro and a pinch of salt to make Pico de Gallo
  3. Microwave SOMOS™ Poblano Brown Rice and SOMOS™ Mexican Black Beans together for 3 minutes.
  4. Assemble two bowls with all the ingredients
  5. Add lime juice, salt, remaining cilantro and enjoy with SOMOS™ Unusually Thick & Crunchy Tortilla Chips
