Ingredients

  • 1 pouch of SOMOS™ Cauliflower Tinga
  • 6 corn tortillas
  • ¼ cup white onion, diced
  • ½  tomato, diced
  • 1 jalapeño, diced
  • 3 tbsp cilantro, chopped
  • 1 avocado, mashed
  • 1 lime, cut into wedges
  • 2 tbsp vegetable or olive oil

Prep

  1. In a large cast iron skillet or comal, heat oil and cook tortillas until warm and pliable
  2. In a small bowl, combine mashed avocado, ½ of the onion, ½ of the jalapeño, 1 tbsp of cilantro, and a pinch of salt
  3. Stir to combine
  4. Spread the contents from the small bowl evenly onto each tortilla
  5. Microwave SOMOS™ Cauliflower Tinga for 90 seconds and scoop it onto the tortillas
  6. Garnish with the remaining onion, tomato, jalapeño, and cilantro
  7. Serve with lime & enjoy!
