Ingredients

  • 1 bag of SOMOS™ Unusually Thick & Crunchy Tortilla Chips
  • 1 jar of SOMOS™ Salsa Verde Mild Salsa
  • 1 pouch of SOMOS™ Mexican Street Corn White Rice
  • 1 pouch of SOMOS™ Chipotle Refried Black Beans
  • 2 eggs
  • ¼ cup crema or sour cream
  • ¼ cup cotija cheese or cheese of your choice
  • 3 tbsp cilantro, chopped

Prep

  1. In a pan over medium-high heat, pour full jar of SOMOS™ Jalapeño Pepper Salsa Verde and cook until salsa starts bubbling
  2. Add SOMOS™ Unusually Thick & Crunchy Tortilla Chips and gently toss to thoroughly coat the chips
  3. Scoop the salsa-coated chips (aka chilaquiles) evenly into 2 bowls
  4. Microwave SOMOS™ Mexican Street Corn White Rice and SOMOS™ Chipotle Refried Black Beans together for 3 minutes and add both on top of each chilaquiles
  5. In the pan, cook 2 sunny side up eggs & lay them on top of each chilaquiles, taking care to not break the eggs…yet
  6. Drizzle with crema and garnish with cotija cheese, chopped cilantro and any of your mom’s favorite toppings
  7. Serve with napkins & her favorite morning drink - enjoy!
