Ingredients

  • 1 pouch of SOMOS™ Mexican Brown Rice
  • 1 pouch of SOMOS™ Mexican Black Beans
  • 1 pouch of SOMOS™ Cauliflower Tinga
  • 3 tbsp of SOMOS™ Salsa Verde Mild Salsa
  • 1 sweet potato, diced
  • ¼ cup mixed greens or spring mix
  • ¼ cup corn
  • ¼ cup beet sprouts
  • 2 tbsp crema or sour cream
  • ½ avocado
  • 2 tsp olive oil
  • ½ tsp salt

Prep

  1. Preheat oven to 400° F
  2. Dice sweet potato into small cubes, drizzle with olive oil, and season with salt & pepper, roast in the oven for 20 minutes
  3. Separately microwave SOMOS™ Mexican Brown Rice, SOMOS™ Mexican Black Beans, and SOMOS™ Cauliflower Tinga for 90 seconds
  4. Add SOMOS™ Mexican Brown Rice, SOMOS™ Mexican Black Beans, and SOMOS™ Cauliflower Tinga, sweet potato, mixed greens, corn & beet sprouts to a bowl
  5. Use any dressing or make your own dressing
  6. To make your own dressing, blend SOMOS™ Jalapeño Pepper Salsa Verde, crema, avocado & olive oil until smooth
  7. Drizzle dressing over the rice bowl & enjoy
