Ingredients

  • 1 pouch of SOMOS™ Mexican Street Corn White Rice
  • 1 jar of SOMOS™ Smoky Chipotle Medium Salsa
  • 1 egg
  • 1 tbsp cilantro, chopped
  • 1/2 cup parmesan cheese, grated
  • ½ tsp salt
  • ½ tsp ground black pepper
  • 2 tbsp of flour

Prep

  1. Preheat the oven or air fryer to 400° F
  2. In a bowl, mix SOMOS™ Mexican Street Corn White Rice, egg, salt, cilantro, cheese, pepper and flour
  3. With the help of 2 spoons, shape the croquettes
  4. Place croquettes in the air fryer and spray with olive oil spray, cook for 10 minutes or in the oven for 15-20 minutes
  5. Serve with SOMOS™ Smoky Chipotle Red Salsa
